Mushroom Turnovers

IMG_0799When I was in Junior High, a group of my girlfriends and I were into having dinner parties. We took turns hosting, dressed up and made a fancy meal complete with dessert for everyone. It was fun, each host making different meals, decorating the table, and trying new things.

On the evening that I hosted I, wanting to ensure everyone could enjoy what I was making, checked with the girls in regards to any allergies and/ or dislikes. Interestingly, they all came back with a resounding, “We don’t like mushrooms”. I clarified whether this was a dislike or an allergy and when they confirmed it was simply a dislike, I secretly smiled.

I had found this fabulous recipe for mushroom turnovers which I was dying to try and since they weren’t allergic to it… I made them and served them as the appetizer, saying nothing about what was in them. They LOVED them! No one noticing at all that it was mushrooms that they were eating. They thought it was ground beef.

After we were done the appetizer I then revealed to them that they had actually eaten mushrooms and no ground beef was present whatsoever. They were surprised (and thankfully not mad), and we went on to enjoy the rest of our meal and evening (which I have no idea what the rest of the meal was).

Needless to say, this recipe became a family classic in my  house. My Mum and sisters using it over the years for many events and parties. My Mum often has 4 dozen or more in the freezer at Christmas, ready to pull out and heat up whenever we want snacks or guests pop by. I have adopted the same philosophy and you’ll easily find turnovers (and other goodies) in my freezer this time of year.

The original recipe does contain dairy, calling for cream cheese and sour cream, but I have been able to adapt the recipe. Using vegan cream cheese and vegan sour cream they are still just as fabulous! (which having had the original I can fairly compare)

Mushroom Turnovers

9 oz. vegan cream cheese

1/2 c. Earth Balance vegan spread

1 1/2c. flour

In a medium bowl, cream vegan cream cheese and Earth Balance. Add the flour and work with fingers or a pastry blender until smooth. Chill well for at least 30 minutes.

Filling:

3 tbsp. Earth Balance vegan spread

1 large onion, finely choppedwpid-SourCream3-318x270

*1/2 lb. mushrooms, finely chopped

1/4 tsp. thyme

1/2 tsp. sea salt

pinch black pepper

2 tbsp. flour

1/4 c. vegan sour cream

In a skillet, melt the Earth Balance. Add onion and brown lightly. Then add mushrooms and cook, stirring often about 3 minutes.

Add the thyme, salt and pepper and sprinkle with flour. Stir in sour cream and cook until gently thickened.

Preheat the oven to 450F. Roll the pastry dough to 1/8″ thickness on a lightly floured surface. Using a biscuit cutter, cut into 3″ round circles.2585_enlarge

Place a teaspoon of mushroom filling on each circle and fold over so that the edges touch. Press the edges together using fingers and prick the tops to allow for steam to escape.

Place on an ungreased cookie sheet and bake until lightly browned, about 15 minutes.

*To finely chop mushrooms I use a food chopper from The Pampered Chef. This makes it quick and easy to get them to the right size.

Makes about 3 dozen

Oh the Weather Outside is Frightful…

For the past week in Calgary we have been experiencing the best winter weather has to offer. Snowstorms, blizzards, blustery winds and freezing cold. High snow drifts that take hours and a lot of brawn to shovel. We’ve experienced long commutes to work, traffic jams and slippery road conditions.IMG_2505

Yet in the midst of all this is Christmas. Shopping, festivities and all kinds of family fun activities to go and do. This past weekend especially there was lots of fun things going on and when I heard the weather forecast I was saddened by the things we would likely miss. Yet….

On Friday I decided to bundle the kids up and head out to see the reindeer at the Kingsland Farmers Market, it was only -23. And on Saturday when it was -30 C I decided to bundle them up again and take them out to Christmas at the Hive in Okotoks at the Chinook Honey Company. Then we came home and had lunch and quiet time, and then yes I was likely crazy or simply had brain freeze by this time, bundled up one more time and went to the CP Holiday Train arriving at Anderson station (by now it was only -18 C so really significantly warmer).

All in all it worked out well. We used buildings and indoor options when we could, mixing up being outside with being inside. It turned out the reindeer were outside but you could wait inside to go and see them. The honey farm you could go in and out of the store as well as the Discovery Center and the sun was out! Which I find can make all the difference.

By the time we got to the train which was all outside, we managed to stay for an hour and a half before it was just too cold and uncomfortable to stay any longer.

Now you might think I am a crazy person for taking my kids out when it was that cold. But when I was growing up I learned that weather is, and you can’t change it; so are you going to miss an opportunity and let the weather dictate what you do or are you going to get out there and enjoy it? Of course it is important to be smart and sometimes it is the right decision to choose not to go. In this case though it was doable and we were able to make it a comfortable and enjoyable experience for everyone.

IMG_2525We dressed warmly, layering from long underwear, wool sweaters and snow pants. We brought warm drinks and snacks to share. In fact to the train we even brought some soup in a thermos. I was surprised by how many people I heard around us saying “Oh they brought soup” and commenting on how good it smelled and how they would like some.

We also knew when to leave, we didn’t try to make the kids last a little longer or do just one more thing. When we started to see signs that the cold was making us unhappy we were thankful for our experience and headed for the car. Even though I would have loved to have stayed longer and listen to Sarah McLachlan.

Life is what you make it. Now we have pictures and memories and Luke already asking to go back to the Christmas Train. And when we got home we put on the fire, sat on the couch and cuddled, while enjoying snacks and hot apple cider. Everyone happy and chatting away about the evening.

Now I know for some it is really challenging to go out in certain types of weather and of course we all need to do what is best for us. But if you’re prepared and have the right attitude you don’t always have to choose to stay home.

PS Now on Sunday I was quite happy to stay home and not go anywhere….but I was glad we did all those things this weekend. I wouldn’t trade it for the world.

Sun Dried Tomato & Goat Cheese Bruschetta

I love appetizers! They are small bite size morsels full of flavour and delight! You can sample many different ones without feeling full, guilty or like you’re overindulging. And there are so many good, delectable recipes out there, I’m never at a loss for variety or a recipe to choose.

Mushroom Turnovers

Of course I have my favorites, like Mushroom Turnovers and good old fashioned meatballs in a sweet and sour sauce, but like with everything else in food I like to branch out and try new things. A couple of years ago I found this recipe in a magazine at the gym. It looked good so I copied the recipe and tried it. It was an instant hit with everyone! Matthew, my spouse and dinner guests. So much so that my dinner guests asked for the recipe.

I loved it too and made it often over the next few months, sharing it with different guests or enjoying it ourselves. Then I went for a while without making it, until recently when I hosted a wine and cheese with friends and decided to pull it out and dust it off.

Tragedy struck though when I realized I could not find the recipe! A little while back I was organizing recipes and putting them onto my computer. When I did, I would throw away the paper copy. I thought I had done this with this recipe but I hadn’t. What I had done was post it on my first blog which I could no longer access, and then thrown it away, thinking that I would be able to access it forever. I was wrong and completely saddened that I no longer had this recipe.

But you know what they say, nothing on the internet is ever lost if you know where or how to look. It took a bit of figuring and looking but I found it. I was overjoyed to have it once again. I quickly copied it onto my computer and now keep it safe and sound in my files.

cold-platter1It also inspired me to have appetizers at my Christmas party this year. I will make some of my own and asked guests to please bring one to share. It’s a great way to discover more great appetizers and share some of my favorites with friends.

Sun Dried Tomato & Goat Cheese Bruschetta

1/3 c. sun-dried tomatoes, coarsley sliced

1/3 c. roasted peppers (bottled), patted dry and coarsely diced

1/3 c. artichokes (canned or bottled in water)bruchetta 1

1 large garlic clove, finely minced

6 medium leaves fresh basil, thinly sliced

2 tsp. extra virgin olive oil

1/2 tsp. balsamic vinegar

Pinch ground pepper

12 thick, sturdy crackers or slices of whole wheat baguette

1/3 c. goat cheese

1/4 tsp. salt

In a medium bowl, gently fold together sun-dried tomatoes, roasted peppers, artichokes, garlic, basil, olive oil balsamic vinegar and ground pepper. Spread each cracker or baguette slice evenly with goat cheese. Top with vegetable mixture. Sprinkle bruschetta with grains of salt, if desired.

Makes 12 pieces

10 Reasons why I LOVE a snowstorm

Snowstorm-2For the past 2 days we here in Calgary have had a major blizzard. Lots of snow coming down and a nice strong wind to blow it around. It was crazy! Highways were closed, accidents everywhere; they were strongly advising you to stay at home if you did not have to venture out.

I know a lot of people hate snowstorms and when one arrives, do not enjoy it with many complaining. But hey it’s weather and weather is one of the few things in our lives that we actually cannot change. Though a snowstorm is not always fun.

I actually love a good snowstorm for many reasons. I know many of you are likely going to argue with me on this one, but I think they are many good things that can come from it.

So here are 10 reasons Why I LOVE a Snowstorm

  1. It is a great excuse to take the day off! Whether you cannot get to work, school, etc. or choose not to go; you can take a break from the regular days activities.
  2. You can stay inside and cuddle up on the couch with your family. Watch movies andFamilie_2075 get cozy under a blanket.
  3. Or you could go outside and play in it! There is nothing like enjoying and playing in fresh new snow.
  4. It adds to the toboggan hills (and ski hills). So as soon as it stops you can go enjoy the fresh powder.
  5. It’s a good day to catch up on things at home. That unfinished project, that corner you wanted to clean out.
  6. You appreciate your mobility. Being ‘stuck’ for a day or two makes you appreciate the days of good weather and ones that you can come and go freely. You know without shovelling or warming up the car.
  7. During a storm we often enjoy warm cozy meals. A nice homemade stew or soup. Good hearty meals that warm the body and fill the tummy.

  9. If you do venture out, it is very quiet when you get there. There are less people at the stores, gym and other public facilities.
  10. It’s beautiful when its over. There is a serenity about the world when the storm has passed, the sun comes out, and the peacefulness that exists.

Yes you may think I am crazy but I find there are many gifts in a snowstorm. And sometimes accepting and enjoying those gifts makes the aftermath of ‘cleaning up’ much more pleasant.Major February Snow Storm

How many Christmas Carols do you know?

Christmas-Carols-Origin-and-History-1Happy December 1st! Ok it is the second but it is the official kick off of the holiday season!

I get very excited for December 1st as usually I work hard in November to get gifts bought, cards written and baking done so that the kids and I can enjoy all the festive holiday events that are in December. There seems to be a multitude of them from Christmas parties to community events around the city. We never seem to be able to hit them all, though we try!, but at best hit at least one new one (we’re going to the Christmas train this year for the first time!) as well as attending some of our favorites; such as Zoolights and Once Upon a Christmas at Heritage Park.

We also have a little tradition at our house called December 1st gifts, which is something my Dad started years ago, which is just a small inexpensive gift that is given to enjoy the festivities a little more. Like a holiday coffee, festive candles, or a Santa hat. OLYMPUS DIGITAL CAMERA

Also on December 1st we start a Christmas Carol Challenge at our house, which Matthew and I began 2 years ago. Starting December 1st we sing a different Christmas Carol each day until Christmas. The challenge is not sing the same song twice (and singing by a different artist same sone doesn’t count – ha ha); so though easy at first eventually requires some thought.

It’s fun though because we end up expanding our holiday song repetoire, looking up Christmas songs and learning the words. We even learn the words to some of the songs we think we know! Because as I am sure you can relate, there are some Christmas songs out there that are popular and well known but we only know the first verse.

So we print out the words for everybody and sing the song together and it’s lots of fun. We pick the same time each day to do it. The past couple of years being when we walked to the bus for school, but since Matthew walks on his own to school now, we have decided to do it at dinnertime. The twins love it too as they love singing and learning lots of songs lately.
